Ingredients

  • 1 3-pound/1.3 kilograms chicken fryer
  • 1/3 cup/80 milliliters dark soy sauce
  • 1/4 cup/60 milliliters lime juice
  • 1/4 cup/60 milliliters honey
  • 3 tablespoons/45 milliliters brown sugar
  • 3 cloves garlic (minced)
  • 2 tablespoons/15 milliliters ketchup
  • 1/2 teaspoon/2.5 milliliters Tabasco
  • 1/2 teaspoon/2.5 milliliters sea salt
  • 1/2 teaspoon/2.5 milliliters black pepper
  • 1 teaspoon/5 mL sesame oil

Steps to Make It

  1. Combine all ingredients except the chicken and mix well.

  2. Separate out 1/3 of the mixture and brush over the entire surface of the chicken inside and out. It's best if you can get as much as possible under the skin, particularly over the breasts.

  3. Place chicken on rotisserie spit and grill over medium-low heat on the grill with a drip pan under the chicken. After 20 minutes of cooking time brush with part of remaining of the mixture.

  4. Repeat after another 20 minutes.

  5. Continue grilling until chicken has reached an internal temperature of 165 F in multiple areas, particularly the thigh area. Chicken should take about 1 1/2 hours to cook.

  6. Remove from heat and let chicken rest for 10 minutes before carving.

  7. Serve and enjoy!
