Grilled Lemon-Ginger Chicken

If you're looking to cut calories but still want to enjoy a delicious piece of grilled chicken, then this recipe for you. These chicken breasts can also be sliced and placed on top a fresh green salad.

Prep Time: 13 minutes

Cook Time: 20 minutes

Ingredients:

  • 4-6 chicken breasts, skinless and boneless
  • 1/3 cup orange juice
  • 1/3 cup lemon juice
  • 3-4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon fresh flat leaf parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation:

Place chicken breasts in a large resealable plastic bag. Combine remaining ingredients and pour over chicken. Seal bag and allow to marinate in refrigerator for 1-3 hours. Preheat grill for medium heat. Remove chicken from bag and reserve marinade. Place chicken onto a lightly oiled grill grate and brush with marinade 2-3 times during the first half of the cooking time. Cook chicken for 20 minutes or until meat is no longer pink and juices run clear.
