Grilled Glazed Chicken on Cedar Plank

These grilled chicken pieces have a wonderful sweetness from the glaze and a smoky flavor from smoldering wood.

Prep Time: 15 minutes

Cook Time: 55 minutes

Ingredients:

  • 4 chicken thigh and leg quarters
  • For glaze:
  • 1/2 cup peach or apricot preserves
  • 1/4 cup onion, minced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon chili sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1 cedar plank

Preparation:

Soak plank in water for at least one hour before using. Combine all glaze ingredients in a small saucepan over low heat for 5-8 minutes. Set aside. Preheat grill for medium-high heat. Place chicken quarters on plank and spoon glaze onto chicken. Place on grill and allow to cook for 30 minutes, reduce heat to medium, and cook for additional 20-30 minutes. When juices from the chicken runs clear, remove from heat and serve.
