Ingredients:
- 4 boneless chicken breasts (about 6 ounces)
- 1/4 cup fresh tarragon, chopped
- 1/4 cup olive oil
- zest and juice of 1 orange
- zest and juice of 1 lemon
- 2 teaspoons salt
- 2 teaspoons ginger, grated
- 2 cloves garlic, minced
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper, ground
Preparation:
Combine all ingredients, except chicken breasts, in a medium bowl. Place chicken in a resealable plastic bag and add marinade. Seal and place in the refrigerator for 4 hours.
Take chicken out of bag and pour marinade into a saucepan. Boil marinade for a few minutes.
Preheat grill for medium heat. Place chicken on grill and let cook for 10-12 minutes, turning once and basting with marinade. Remove from grill when finished cooking and serve immediately.
