Rotisserie chicken in not only a popular fast food from the deli counter at your local store, it is the best way to cooking the perfect chicken. Two things you probably don't know are that rotisserie chicken is perfect 10 minutes off the grill, not hours under a warming lamp and rotisserie chicken is a lot easier than you think it is. With a grills (charcoal or gas), a rotisserie kit, and a chicken you can make much better chicken than the grocery store can.

To start you need to get your rotisserie kit setup on your grill. This is a pretty easy operation that requires 10 minutes and a screw driver. Of course different grills and rotisserie kits have different setups so read the instructions.

You will also need to prepare your whole chicken. Remove the stuff from the inside and cut off any loose skin. If you really want it tender and moist then I suggest that you brine the chicken but that isn't necessary. You may also want to truss the chicken to hold it together better on the rotisserie.

To follow this step by step you will need:

  • A grill (charcoal or gas)
  • The rotisserie kit for your specific model of grill
  • Fuel for your grill to run for 2 to 3 hours
  • A whole chicken
  • One lemon (or apple, potato, onion or similar item)
  • 1/2 cup olive oil
  • 1/2 cup lemon juice
  • 2 tablespoons rosemary leaves
  • A hot pad or fireproof glove
