Bacon and Onion Stuffed Brisket

This bacon stuffed brisket is simple to prepare. Just make sure to properly seal it with pre-soaked bamboo skewers, and you'll have a tender and delicious brisket for any occasion.

Prep Time: 20 minutes

Cook Time: 10 hours, 00 minutes

Ingredients:

  • 1 beef brisket, about 8-10 pounds
  • 1 medium white onion, sliced
  • 2 cloves garlic, crushed
  • 3 tablespoons brown sugar
  • 1 tablespoon kosher salt
  • 1/2 tablespoon black pepper, ground
  • 2 teaspoons paprika
  • 1-2 bamboo skewers, presoaked

Preparation:

Cut into thick side of brisket making a pocket about 5 inches long. Stuff with onion, bacon, and minced garlic. Close pocket with bamboo skewers. Combine brown sugar, salt, paprika, and black pepper and rub onto brisket. Prepare smoker. You will want the brisket to smoke for about 8-10 hours at 180-200 degrees. Place on smoker and cook until the internal temperature reaches 185 degrees. Remove brisket from smoker and wrap tightly in aluminum foil. Let set for 20-30 minutes for slicing.
