This brine is perfect for pork, but works well with other meats like poultry. Brining adds moisture and flavor to anything you cook.

Yield: Enough Brine for 5 pounds
- 8 cups/1.9 L of water
- 1/2 cup/120 mL kosher salt
- 1/2 cup/120 mL sugar
- 1/2 cup/120 mL whole black peppercorns
- 2 tablespoons/30 mL allspice berries
Boil 2 cups of water. Add salt and sugar and stir until dissolved. Add remaining 6 cups of cold water and stir in remaining ingredients. Makes enough brine for about 5 pounds of tenderloin. Brine for at least 12 hours.
