Beer Brine for Fish

This brine is sure to enhance the flavor of any fish that you grill or smoke.

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: Makes about 5 cups

Ingredients:

  • 4 cups brown ale
  • 1/2 cup sea salt
  • 1/2 cup brown sugar
  • 1/4 cup pickling spice
  • 1/4 teaspoon cayenne pepper (optional)

Preparation:

Place all ingredients in a medium saucepan and bring to a boil. Reduce heat and stir until salt and sugar and dissolved. Remove from heat and allow to cool before using.

As a forner head-chef, the key to any fish brine, is to let the fish brine over-night, then remove it wet onto a dry surface and pat the filet down using paper towels. Let it stand at room temperature for an hour, this aids the cure and forms a glaze on the fish.
