Clove Pork Brine

This is an excellent general purpose brine that can be used on any cut of pork.

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: Makes about 1 gallon of brine

Ingredients:

  • 1 gallon water
  • 1 cup salt
  • 1/2 cup brown sugar
  • 1/4 cup whole cloves
  • 1/4 cup juniper berries
  • 1/4 cup ground nutmeg
  • 6 cinnamon sticks

Preparation:

Combine all ingredients in a saucepan and bring to a boil. Remove from heat and allow to cool completely. Place with pork in a large container making sure that brine completely covers the pork.

Two things I have learned about brining, it's not a marinade, and it's easier and faster to heat one cup of liquid and dissolve your salt (and sugar) in that. I don't want to wait for 2 -4 quarts of liquid to cool. Salty? Try using half water half and apple juice, or whatever you like.
