Pork Tenderloin Brine

This brine is perfect for pork, but works well with other meats like poultry. Brining adds moisture and flavor to anything you cook.

Prep Time: 20 minutes

Ingredients:

  • 8 cups of water
  • 8 ounces kosher salt
  • 8 ounces sugar
  • 1/2 cup whole black peppercorns
  • 2 tablespoons allspice berries
  • 1 tablespoon saltpeter

Preparation:

Boil 2 cups of water. Add salt and sugar and stir until dissolved. Add remaining 6 cups of cold water and stir in remaining ingredients. Makes enough brine for about 5 pounds of tenderloin. Brine for at least 24 hours, however you can leave it for several days it you wish.
