Moroccan Beef Koftas

This is an ancient way of grilling ground meat. The secret is to make sure the meat is sticky enough to hold together on the skewers. Once it starts cooking the meat will harden and hold on, but you should still be careful.

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: Serves 4 to 6


  • 1 1/2 pounds lean ground beef
  • 1 onion, finely chopped
  • 1 egg
  • 1/2 cup cilantro, finely chopped
  • 2 teaspoons ground coriander
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cinnamon


Combine all ingredients and form into thick sausages. Thread onto skewers. Preheat grill and oil cooking grate thoroughly. Place koftas on hot grill and cook for about 8 minutes, turning once. Serve with pita bread and raw onion rings.

Watch when removing from the grill, Member 2clfrwrds

If you use metal skewers, when you pull koftas off the grate, remember you have very hot pieces of metal sticking out where you usually don't. If you're like me, you may have more than one thing on the grill, and you may be moving pretty quickly. One false move around a hot steel skewer, and you too will be posting a warning like this!
