Southern Fillet of Beef

This beef tenderloin is served up with a rich, southern style sauce that makes it taste like a fantastic grilled pot roast.

Prep Time: 20 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 fillet of beef (4 to 6 pounds)
  • 3/4 cup butter
  • 1/2 cup of ketchup
  • 1/4 cup red wine vinegar
  • 2 large cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar
  • 2 teaspoons salt
  • dash of hot pepper sauce

Preparation:

Rinse off the fillet of beef and pat dry with paper towels. Place in a glass or ceramic baking dish. Combine all other ingredients except the butter in a sauce pan and bring to a boil. Reduce heat and add butter about 2 tablespoons at a time, letting it melt completely before adding more. Remove from heat and let cool. Pour mixture over meat and refrigerate for 1 hour. The marinade will thicken as the butter cools.

Preheat grill. Drain the fillet and place on hot grill. Sear on each of the four sides for 3 to 4 minutes. Reduce the heat or move the meat to a cooler part of the grill and continue cooking, lid down for about 20 to 30 minutes or until done. Remove from grill, slice thinly and serve with remaining marinade that has been reduced over a medium heat.
