Ingredients:
- 4 boneless veal chops, about 1 inch thick
- 1 Granny Smith apple, chopped
- 1/2 cup crumbled blue cheese
- 1 shallot, finely chopped
- 1 tablespoon olive oil
- 1 teaspoon fresh basil, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Preparation:
To prepare stuffing: Combine all ingredients, except veal chops, in a small bowl. Set aside. Remove excess fat from veal and create a small pocket in each chop. Fill with a 1/4 cup of blue cheese mixture. Secure with toothpicks and sprinkle with salt, pepper, and brush on olive oil.Preheat grill for medium heat. Place chops on grill and allow to cook for 6-7 minutes on each side. Remove from heat and serve.
