Dino Bones with Chipotle Red Wine Barbecue Sauce

Cook Time: 3 hours, 30 minutes

Total Time: 3 hours, 50 minutes

Yield: Serves 4 to 6

Ingredients:

  • 4 to 5 pounds beef back ribs
  • 1/4 cup kosher salt
  • 2 tablespoons brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon chipotle chili powder
  • For sauce:
  • 1 cup ketchup
  • 1/2 cup dry red wine
  • 1/3 cup brown sugar
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

Preparation:

Trim excess fat from beef ribs. Combine salt, pepper and chili powder. Rub over the ribs. Preheat grill and prepare for indirect grilling with a drip pan. Place ribs on grill over drip pan and close the lid. Cook for about 3 to 3 1/2 hours over a medium low, indirect heat (try to keep the temperature under 265 degrees F.).(For smoked beef ribs see Beef Ribs.)

In a medium saucepan, add olive oil, garlic, chipotle powder, and cumin. Allow to heat through while stirring, for 1 minute. Add red wine and brown sugar. Simmer for 2-3 minutes. Add in soy sauce, vinegar, ketchup, and Worcestershire sauce. Simmer for 2 minutes more. Remove from heat, allow to cool slightly before using.
