Molasses Barbecue Sauce

This sweet barbecue sauce has a little tomato and a lot of everything else. It goes particularly well with chicken and pork.

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 3 cups chicken stock or canned low-salt chicken broth
  • 1 cup dry white wine
  • 1/4 cup apple cider vinegar
  • 1/4 cup light molasses
  • 1/4 cup chopped fresh tomato
  • 3 tablespoons minced shallots
  • 2 tablespoons chopped pitted dates
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon dried crushed red pepper

Preparation:

Mix all ingredients together in a large saucepan. Bring to a boil and reduce until its thickened. Should be reduced to about 1 1/2 cups. Stir while reducing.

Can be prepared 1 day in advance to allow flavors to blend.
