Lee Custer's Barbecue Sauce

From Lee Custer

Lee Custer sent me this great barbecue sauce recipe. There is the option of using tomato paste or ketchup. While both are good, they each give a unique take on the classic barbecue sauce recipe. If you haven't tried using tomato paste or tomato sauce for that matter, then give it a try. You'll get a richer tomato flavor than with ketchup.

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

Yield: Makes about 3 cups

Ingredients:

  • 1 1/4 cups tomato paste or catsup (good with either or mixture of both)
  • 1 cup water
  • 1/2 cup onion, chopped
  • juice of one lemon
  • 1/4 cup beer
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/3 cup Worcestershire sauce
  • 2 big dashes of hot sauce such as Tabasco
  • 1/4 cup vinegar
  • 1/8 cup basil vinegar or balsamic vinegar (I prefer the basil)
  • 1 clove garlic

Preparation:

Place all ingredients in sauce pan except the onion and garlic. Put onion and garlic in a blender and liquefy. Mix with the other ingredients in the sauce pan. Heat until boiling over low heat, let simmer for 20 minutes. Good on all meats.

Made some small changes, Member hibatt

I added about 2 tablespoons of honey to sweeten it up a bit, plus used about 4 chipotle peppers with the adobo sauce to give it the heat and a little smokey flavor. Did not add the tabasco and did use the catsup. Came out awesome.
