Wicker's BBQ Sauce

This vinegar based barbecue sauce works just as well as a mop as it does a table sauce. This recipe is very similar to the sauce served at the famous Wicker's BBQ from Missouri.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: Makes about 1 1/2 cups


  • 1 1/4 cups cider vinegar
  • 1 teaspoon black pepper
  • 2 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 4 teaspoons chili powder
  • 1 teaspoon dry mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin


Combine all ingredients and cook for 5-10 minutes to dissolve spices. Use as a marinade and basting with your favorite BBQ recipe.

When I was a boy in South Alabama, my grandfather would take me to cattle auctions, and afterwards, outside the auction arena awaited a pig in a pit that had been slow cooking all day. Grandfather also used a variation with dried red peppers and a little butter and lemon for his Sunday BBQ's chicken. Oh yes, the bar-b-ques were always accompanied by pots of Brunswick Stew!
