Broccoli slaw is one of the most nutritious and least expensive foods in the supermarket. To make broccoli slaw yourself, you must peel broccoli and cut it into very thin strips. Unless you have a mandolin or a food processor, this takes a lot of time!

The broccoli slaw used in these recipes is sold right by the bagged salad greens in the produce aisle at the supermarket. It's thinly sliced broccoli, sometimes packaged with carrots or cabbage. Buy a package or two and try these quick and easy recipes using this healthy ingredient.

You can use other coleslaw blends in place of the broccoli slaw if you'd like. Also consider using other ingredients: low fat mayonnaise or plain yogurt instead of full-fat mayo; use cooked shrimp or chopped ham in place of chicken; or use other breads for sandwiches. Think about adding other vegetables too. Some cubed avocados, sliced or halved cherry tomatoes, frozen peas, or chopped red bell peppers would all be delicious. Enjoy.
