This is how to put together a classic sausage sandwich. If you already have smoked sausages try heating them up on the grill to give them an even more "real fire" flavor.

Ingredients:
- 1 1/2 pounds sausage
- 3 bell peppers
- 1 medium yellow onion
- olive oil
- 6 sandwich buns
- Dijon mustard
Preparation:
Smoke sausages (Hot Italian are good for this recipe) at 200 degrees F. in your smoker until done. About 2-3 hours. When about done sauté peppers, onion in olive oil until just tender. Remove sausages from smoker and cut lengthwise. Assemble sandwiches.
