Keeping Grilled Vegetables from Drying Out

Soak Vegetables before you Grill

The dry, hot environment of a grill can dry foods out quickly. When it comes to grilling vegetables you should soak them in cold water for 30 minutes before you put them on the grill to prevent them from drying out. Soaking hydrates the vegetables so they have more water to loose and can hold on to enough to keep them from drying out. This added moisture also helps allow vegetables to steam from the inside while they are on the grill and actually cook faster.

Also, avoid over cooking vegetables on the grill. If you want vegetables that have been cooked to death, boil them instead. Grilled vegetables should have moisture to them and still be firm.
