How to keep large cuts of meat moist while grilling for a long time

The environment of a grill is hot and dry. While this extreme dry heat is a great way to cook, it can dry out meats that require longer cooking times. If you have a large cut of meat, like a roast or a very thick steak that is going to need to be on the grill for a long time it can dry out before you get it grilled completely. To add moisture to the grilling environment place a pan of water on the grill, away from the meat you are grilling. This will add moisture inside the grill and reduce the amount of moisture that is being drained from meats while grilling.
