I do my turkey in a Weber kettle, indirect heat. I massage the bird inside and out with butter then season with salt, pepper and poultry seasoning. I cook it for the first hour breast side down and then finish it 1-1 1/2 hrs breast side up. It comes out golden brown and very juicy.
I forgot to mention, I use Kingsford briquets with mesquite and add some extra chips.
i cooked a turkey last year on my lang 48 deluxe with fruita wood chunks peach.. i rubbed it down on the outside of skin and underneath skin then i put a mixed fruit package from walmart in the inside full as you can get it i sewed the hole closed tight so no juices leaked out. i smoked it 220 for about 4 hours and we carved it with a butter knife
