There's been a lot of talk in recently about which way you should turn your brisket for smoking. Fat Side Up or Fat Side Down.  This leads to many avid barbecuers flipping their briskets over on way or another. So the question this week is:

POLL: Which way do you set your brisket for smoking?
1) Fat Side Up the Whole Time
2) Fat Side Down the Whole Time
3) Fat Side Up then Fat Side Down
4) Fat Side Down then Fat Side Up
5) I flip it back and forth the whole time like a fish
6) Something Else (please specify in the comments)

I am something else, as I do mine, fat side up, but left to right the whole time.

I think, I will set my brisket for smoking fat side up the whole time and right to left. So that smoke can spread easily up in the air.
