What do you cook for the big cookout?

We've all gotten used to the idea of grilling up some chicken or chops on a Tuesday evening, but every year there are those big cookout days, holidays when practically everyone fires up the grill or smoker to cookout for a family and friends. These are the times when we can show off our best recipes and dish up our best barbecue. So this weeks questions is about these special, nearly formal cookouts when our reputations are on the line and hungry people gather around to see what we have on the grate. So:

I enjoy good ‘ol American standards for the Independence Day feast like cheeseburgers or BBQ ribs, but I like to change it up sometimes and have hot Italian sausage with peppers, or a good German style Brat, marinated first in beer, then grilled slowly to perfection. You can also parboil the Brats in onions and beer first, and then finish them off on the grill. My family did that last year and it tasted awesome!

My dad went to the butcher shop and bought an uncured ham and grilled it. We had an old hickory tree in the back yard. The last half hour of grilling, he added some bark he had soaked overnight in water to smoke the meat. The ham shank had the best flavor you could imagine.
