Chicken Breasts with Fresh Mozzarella and Tomatoes

This classic is a great way to put together a quick and easy appetizer. Pound out a couple of chicken breasts to an equal thinness. Marinate with some olive oil, wine and basil for an hour or two. Throw them on the grill, sprinkle with a little salt and a lot of black pepper. Flip them over and season again. When they are done remove from the grill and cut into bit sized squares. Stack the chicken with slices of small tomatoes (like roma tomatoes) and fresh mozzarella. Drizzle a little olive oil over top and sprinkle with more black pepper. Perfect for virtually any occasion.
