Pork Butt or Picnic
"I have a few questions I would like to know the answer to.
I want to smoke a Picnic portion of the shoulder. I think that is correct. It weighs about nine pounds.
Questions:
Is the skin removed and some and some of the fat also?
Can it be halved and used for two different recipes just as well as using the whole nine pounds at one time. nine pounds of meat for a single person is allot of eating:> this way I could also use two recipes for the experience.
Is the rub also applied to the fat if fat remains on meat? "
