Wood Question

DENNIS12345 (DENNIS12341) Writes:

"About 5 Months ago lightening struck a tree in my backyard, so we dropped it and split it. Being from Louisiana, firewood isn't really needed around here and I have about 4.5 to 5 cords of Red Oak sitting in my backyard. Is this good for bbq’s and smoking as a fire source?"

Oh yea oak is excellent for smoking. I really like using it with beef or pork ribs. Don’t like it with chicken or fish though. Use it in your smoker box and not right under your meat. Direct smoke from oak is rather acrid and will produce a bad finish. But if you use it indirectly and get good penetration (cooler temp, dense smoke) then it is great. Good luck!
