Thanksgiving Smoked Turkey and Pork on the Smoker

Thursday November 27, 2003
audiobotica Writes:

"We've got 20 people to feed on Thanksgiving. My brother-in-law is doing a fried turkey. I'm thinking of doing a brined smoked turkey and an additional smoked pork dish on the WSM. Any ideas on good recipes for each of the dishes and how to juggle the two as far as start times to get a simultaneous finish?

I guess the turkey will be on the bottom rack cause the pork will cook quicker. Will the pork drippings onto the turkey mess it up/improve it/have little effect or should I tent the turkey?

I've also got an indoor electric roaster oven I could do a Pork with garlic recipe I have, but then I'd have to figure out a side dish like stuffing or a casserole to do on the other WSM grill level cause oven/stove top/warmer space in the house will be hectic.

If anyone has experience trying something like this, I sure would appreciate your feedback!"
