"I am planning on making two ducks barbecued on either my gas grill on a rotisserie or on my charcoal Weber. I have never made duck this way before. Any one out there BBQ duck in either fashion any help with recipes or technique would be very much appreciated."

Spicy BBQ Duck Breast

~ duck breasts
~ cream cheese, softened
~ jalepeno peppers, chopped
~ bacon

Slice the breasts long ways until it has an open pouch.

In a bowl, place the cream cheese and peppers to taste. Mix until smooth.

Fill the pouch in the breast with the cream cheese mixture.

Wrap bacon around the breast and hold together with toothpicks.

Grill over medium heat until the bacon is almost burnt.

Serve and enjoy!

I coo the ducks with indirect heat and smoke them. The night before I trim fat from duck and marinade with rub paprika, onion powder, garlic powder, dried thyme and dried rosemary. Use apple wood chips. Put 6 cups of chips in water for 1 hour. Use tun foils and make packets using 2 cups of wet chips to 1 cup of dry chips and some orange rinds. Clean grill and take grill off of one side and put packet on bottom part of grill. Make sure you poke holes in packet before putting it on grill! Put heat at high on side with packet only until it starts to smoke and turn down and close lid. Cook at 220 – 250 until duck is done. Depending on size you might have to use three packets. Change out packets every hour. The lats 30 minutes you can cover ducks in BBQ sauce.

1. Put entire duck into a large roasting pan with at least 1.5 of water. Pierce duck all over. Cover with foil. Steam duck for 40-50 minutes to render out the fat. Saute 2 or 3 fresh white peaches in butter to caramelize them, about 20 min. Add 3 tbs of cognac. Use this as a basting sauce. Baste duck often. Stufff a peach or 2 marinated in cognac into the cavity. Season to your taste. Grill duck until skin is crispy.
