Masterbuilt 7 in 1 Gas Smoker, Griller

"Just recently purchased the 7 in 1 from Masterbuilt - not my "dream" smoker but I will be building one later this year - I've been grillin and smokin for about 30 years.

This is my first experience with a combo unit. Compromise is OK and I am using lava rocks in the lower pan with wet hickory wood chips and chunks. I will try the water pan and see what it does or doesn't do for me. The aroma is great and the temp can be stabilized - now I get to add some meat tonight and on Friday friends are showing up with some top choice steaks - so I expect to grill and smoke right away.

Anybody out there with any advice, suggestions, etc. I will really appreciate your input.

We live in Western NC Smokies and can get all sorts of wood for the smoker - I look forward to that.

the 7/1 smoker was the unit that introduced me to smoking and for around 75 bucks, although not a dream kit still is capable. After 2 yrs. you’ve gotten your money’s worth. It’s a good smoker for entry level and beyond. I’ll never go back to “gas grilling”! The smoker has 2 racks- the lower set on top of the water bowl but leaves too little room for enough charcoal/wood etc. under it to allow enough space for charcoal to get air so here’s the solution: place water bowl on top of the lower rack and basically forget about using the lower rack for placing meat on. This is the best way to manipulate the unit to “water smoke”.

I just got this smoker and this is my first experience w/ a smoker. How do I keep the thing smoking w/o having the wood chips catch on fire eventually. I liked the idea of putting the chips over lava rocks. Any advice is greatly appreciated!!!
