I’m also looking for the same information regarding smoking with water oak wood.

I’ve never used water oak, but have found out that there’s a bunch of it behind my house. I’m going to do some ‘pruning’ and try it this weekend. I imagine it’d be similar to red or white oak as far as smoking goes; almost all hardwoods are ideal for smoking and grilling.
