Smoky Mountain Series

Thursday February 20, 2003
AMONTES10 Writes:

"Hello all, I just recently bought my first smoker. I did not do much research on the different types of smokers available. I guess it was an impulse buy. Anyhow, what suggestions do you have, if any, for the the SMOKY MOUNTAIN SERIES SMOKER by the Great Outdoors. It is rectagle looking with 3 racks, a thermostat on the door and the whole front door opens. It has 2 side dampers and one top damper. It stands about 3 1/2 ft.

I have smoked prime rib(5-6 lb.) at about 200 F for 6 hours with the water pan full and came out nice. The problem I have is no matter what I do, the temperature inside always stays at a constant 200F when I am smoking.

I had the temp reach 320F once but it then fell to 200.....I am a beginner at smoking and I am just tyring to practice with some advice that is available."

I recently purchased a Smokey Mountain Smoker 3405GW, I am a beginner but I have smoked ribs, Cornish hens, and Jamaican Jerk Chicken. The only issue I have is that my thermometer does not work it has not worked since I purchased the smoker which was about a month and a half ago. I do not know how hot my smoker gets all I can do is watch the clock an figure out how many hours I need to keep a particular piece of meat in the smoker.

(4) Chad says:

I believe you can buy a remote oven thermometer to put in your smoker that should give you the temp in digital form. It’s nice being wireless you can just leave it on the counter and check it once in a while

been smoking fish and whatever for near 25yr. have owned & built several smokers.Every smoker wil work better by adding forced air.It wii help remove moisture& give better temp.control.removal of excess moisture also helps eliminate creosote.A little computer fan will work on alot of smokers, add a variable speed fan switch for added control.try it think you will like it.

I purchased our smoker over a year ago for my husband. We LOVE LOVE OUR SMOKER. We have NEVER had a problem. The temperature is fine. The never comes out hard. It has been a PERFECT smoker for us. We use different type of wood chips, fruit, wine (example: Pecan chips soaked overnite, different type of chips, Green apples, orange, wine). Not just water. We have an catering business and we cook all kinds of meats on our Smoker. We smoke whole turkeys, turkey wing for for R green & beans. Season ur salmon 2 UR taste, put meat on the smoker then wrap n foil & put small holes in oil foil. Lamb chop, steaks, beef ribs better than the bbq grills, we have even cooked a meatloaf in R smoker whatever, . WE WOULD NEVER TRADE OUR SMOKY MOUNTAIN SERIES SMOKER BY GREAT OUTDOOR 4 NOTHING. I know why U R having problems. Because we R having a Great Time With R Smoker. Another secret. We brought R smoker at Sam’s Club & it was a floor model. We have had NO PROBLEMS. A Great Product. I always read different blogs. I never write a comment. This time I had too. We always think out of the box, trying different way 2 cook with R smoker. I properly will not come back to this blog. Please, DO NOT GIVE UP ON YOUR SMOKER. HAVE FUN.

To those who are not getting a high temperature. I had the same problem with my Smoky Mountin smoker when all teh safety tanks came out. Also same problem with a Weber unit. Called Weber. They told to wait for at least 5 minutes, with the smoker valve turned off, after turning gas on at the tank. This allows the pressure to stabalize in the line. Now I have great flames in both units.

I’m just getting started with my Great Outdoors Smokey Mountain. I have always wanted to rig a “cold smoker” for salmon at 125 degrees or so. Ilook at the flat top of my unit and at the smoke coming out of the top vent and wonder if anyone has tried to rig a contraption on top to capture this smoke and let most of the heat get away?

(19) ted says:

I have a m/n 3605bgd smoker. I purchased additional racks from CFM Home Products 1-800-944-8982. When I am smoking salmon, I flip the filets over about half way through the smoking process. To do this, all I have to do is lay the extra rack on top of the rack with the partialy done filet, flip them both over, and remove the first rack. This eliminates breaking the filet. I live in PA, and in the winter i have trouble getting the temperature high enouth, so I have wrapped my smoker in high temp insulation. This is also good in the summer, as I don’t have to use as much propane. I contacted the manufacturer (CFM Home Products) and suggested they make an insulating cover, but I don’t know if they have done so as of yet.

I just won a Smoky Mountain at HOBO. We got it in the front room cause it’s raining. Not too sure about putting it together in the house. Thanks for all the info. This page has been very helpful. I think mine is a 3005G. Can’t wait for the rain to stop so we can get smok’n.

(21) Frank says:

The problem with it not getting to temperature is not the smoker, its the gas tank and regulator. Follow these steps:
1. Turn gas at tank off
2. Turn gas at smoker on for a 10-15 seconds then off
3. Slowly turn gas tank on (1/4 turn) wait 5-10 seconds. Turn another 1/4 turn. Sometimes you will here a click and then a second click.
4. Turn on the smoker and then light.

The newer tanks and regulators come with a safety that cuts back gas flow. The tank does not have to be on all the way for it to work.
I can get mine very hot (350 deg or better)

Hope it helps – Good luck – Happy smokin’

(22) Beginner needs help! says:

I have a charcoal Smoky Mountain Series, and can’t seem to get the temp above 225 at the highest. It just hovers at 200 no matter what I do. I am wondering if the problem is that the way the charcoals sit in the tray at the bottom, they have no way to get any air flow. In a regular grill, they’d be suspended on a grate where they get air from the bottom. But in this smoker, there’s just not much of any way for air to get down into the charcoal bed.

I used one of the charcoal chimneys to get my charcoals going. I set it on a rack inside the unit, suspended in the air. That got my temp up to 350+. As soon as I dumped them into the tray at the bottom, the temp dropped to 200 almost immediately. This tells me that it has to be an air flow issue.

I was thinking of using a cookie cooling rack or something similar to suspend the charcoals off the bottom of the tray. Has anybody tried a mod like this?

Get some heavy duty expanded metal–the stuff with diamond openings. Or go to your local hardware store and buy a charcoal grate, depending on the size of firebox. Lots of BBQ forums with mods. Search for “smoker modifications”.

(24) Ron says:

There we was a question about how to make a propane smoker such as the Smoky Mountain smoker a cold smoker. The suggestion I have is to not turn on the propane to the smoker. Then take the smoke box. Put in a few pieces of charcoal. Light them and let them get hot. Soak some wood chips. Once the charcoal is hot place some damp wood chips on the charcoal. I have never done this but I used the same approach in a charcoal smoker and it work will. If you want more heat than you get out of the little smoke box you could get a cast iron skillet around 8 inches in size and add more charcoal. Using the 8 inch skillet also should allow you to add more chips and get longer periods of smoke using the propane burner which was another issue found with some propane smokers.

Bought a Smoky Mtn Series 3405GW and tried to call CFM to get extra dampers (mine only has one) to help regulate temp below 200 F. The 800-944-8982 number is no longer in service, tried 888-869-5454 and it is no longer in service, tried 905-858-8010 and it just rings and rings and rings until it finally stops completely. I cannot get hold of anyone at CFM. What’s up?

November 4, 2008 at 4:24 pm
(27) Mike says:

I just found out on the CFM website that if you bought a Smoky Mtn Series smoker from a larger retail store that it is no longer supported by CFM. If you bought it from an independent then they say return there for service or advice.
I guess if you’re like me and just bought it from Walmart, Gander Mtn, or other, you’re pretty much screwed. No support at all. What a sham company.
Here is a clip from their own webiste:

As a result of changes affecting significant portions of the MHSC business our Mass Distribution business has closed. If you have purchased your product from a larger retail store we regret to inform you that your product is no longer supported due to the closure of the business.

If you have purchased your product from an independent dealer, please return to your dealer for technical and warranty support. You may also visit our Customer Care site to locate a dealer or to purchase parts specific to your model.

Try closing the top vent this allows the heat to stay in and raise your temp. Also remember everytime you open the door you have to start over to build your temp back up. Keep a steady temp and things turn out great. This is a wonderful smoker for the beginner or someone that smokes just a little.
